This Korean-Style Cucumber Salad combines crisp cucumbers with a tangy, spicy dressing, offering a refreshing side that’s both heart-healthy and easy to prepare.

Ingredients

  • ½ lb cucumbers
  • 1 tsp salt
  • 2 tsp soy sauce
  • 1 tbsp chili oil
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 3 cloves garlic, minced
  • 2 tsp rice vinegar
  • Sesame seeds for garnish

Instructions

  1. Slice the cucumbers into thin rounds or your preferred shape.
  2. Place the sliced cucumbers in a bowl and sprinkle with 1 tsp of salt. Let them sit for 10 minutes to draw out excess moisture.
  3. After 10 minutes, drain the cucumbers to remove the released water.
  4. In a separate bowl, mix together the soy sauce, chili oil, sugar, sesame oil, minced garlic, and rice vinegar until the sugar dissolves completely.
  5. Pour the dressing over the cucumbers and toss to ensure even coating.
  6. Garnish with sesame seeds before serving.
